Apple Pie Cups, or Baby Pies

My roommate BB was not having a good weekend, and I wanted to bake something for her. We’d had brownies twice in the past week. I considered a cake, but didn’t know if the house we’re living in had cake pans. The house did, however, have a muffin tin.

Get your umbrellas. It’s a brainstorm, y’all!

I chopped apples and added them to the ingredients in my mom’s apple pie filling recipe: 1/3 cup of sugar, 1 tablespoon of cinnamon, a pinch of nutmeg, a bit of butter. They hung out on the stove while I rolled out store bought dough (lazy foodie alert), cut out circles, and situated them in the muffin tin. Then, I filled the dough cups with filling and made a quick lattice crust with the small amount of dough I had left. Popped those suckers in the oven at 400 degrees for about 12 minutes and presto!

They were total deliciousness. And only 125 calories each (I did the math)!

Pie day, pie day!

Thursdays have become Pie Days in B’s apartment.

This has led to several weekly occurrences, one of which being pie appearing in the oven every Thursday, and another one of which being me running up and down the hallways singing “Pie day, pie day, gotta get down on pie day!” to the tune of Rebecca Black’s Friday.

The first Pie Day was celebrated with a wonderfully mediocre pumpkin pie with a lattice crust. Last week’s Pie Day featured apple pie with a lattice crust, which created some divisions in the house. B likes his apple pie with Braeburn apples. I am a Granny Smith apple + one-cup-of-sugar-to-counter-the-tartness purist. I actually detailed this argument in a job interview last week. Not really sure if it was appropriate or not, but it got a chuckle. And I’m great about talking food. As you all know.
